Last Course of the Semester

The inaugural cohort of the POIC CHEF Academy.

The inaugural class of the POIC CHEF Academy is approaching the end of its 12-week semester! For their week 11 practicum, trainees catered breakfast for 25, serving community leaders, including the mayor of the City of Gresham and Worksystems, Inc., whose funding allows for the CHEF Academy to be a paid opportunity. The cohort crafted the menu, prepped, and served the food. The inaugural cohort is soon coming to a close, and these chefs are ready to enter the culinary industry! Week 12, the final week, will culminate into a Student Showcase and graduation from the cohort.

 

Memorable moments from the CHEF Academy

President + CEO of POIC + RAHS, Joe McFerrin II, visited the POIC Kitchen during their seafood cookery week. The cohort cured salmon and prepared gravlax and bagels - yum! Many guest speakers and instructors visited the CHEF Academy cohort, including Plant Based Papi, who demonstrated vegan cooking principles, and Damala D. Christian and Bishop & Sons, who both taught baking and pastry practices. Thank you to our guests who visited the POIC Kitchen this semester!

During beef cookery week, trainees were visited by Burgerville’s Executive Chef, Rebekah McGrath, to create signature burger recipes. They turned out delicious! We are proud to present these emerging culinarians into the industry following their dedication and passion in the program.
